I am changing my series 2 watch to a 5 do I need to change iPhone software for the new I watch?

For the series 2 watch follow these steps;

Unpair and erase your Apple Watch - Apple Support

And for the series 5 watch follow these steps;

Set up and pair your Apple Watch with iPhone - Apple Support
