Can my Parents see my Emails and Texts?
They’re not inappropriate, just private. If I use the Apple mail app will they see what I’ve received and sent?

The answer to this depends on a few factors. If you are using iCloud, and share an Apple ID with your parents, yes, they may be able to see your emails and text messages as iCloud syncs across the devices that are signed in with the same ID and passwords.
Even if you have your own Apple ID or third-party email address, if your parents have your passwords, they can log in and view your emails. Lastly, there are third-party apps that parents can use to view their children's information such as emails and text messages.
