So I just setup my iMessages using my new Apple ID. I went to iMessages then selected the 'Preferences' dropdown, then pressed edit profile picture. I tried multiple times, and even reopened iMessages, but it just won't change. Can someone please help!?

From your post, it sounds like you're having trouble changing your iMessage photo. What exactly happens when you attempt to change the photo? If you're receiving any error messages, please let us know what those are. Are you referring to the Apple ID photo? If so, try the steps mentioned here: Change your Apple ID email, password, or profile picture

No, so I open the iMessages app from my Mac, then get to the preferences pane, (command comma) then there is this profile picture button right on top of my name, in which I press edit:
So I hover over the profile picture, and press edit. Then I created a Memoji, choose it, and pressed done. Then it changes for my Apple ID photo, but not my iMessages. None of my contacts could see my profile picture.
