How could I recover my notes in notability app which disappeared when I signed out from my icloud, knowing that I tried all possible ways that the app recommended ?
When you signed out of iCloud, did you see an option to delete the notes or keep on device?
Was Notability being backed up in iCloud? If it was, did you delete it because if you did, they are permanently gone. If you weren't, you can try restoring from a backup.

Not that I know of. Did you already try either Notability's support or Apple Support?
No , I didn’t delete any note, just because I signed out from my icloud, I can’t find them.
Also I discovered that backup is off in the app, but when I opened it, a message appeared saying that my notes are in the icloud.
No, I didn’t see this option, I discovered that notes were deleted after I opened the app.

Yes, I tried, but they didn’t restore.
