What do they mean by my screen bring “locked” in order to backup?

It isn't locked if you are doing "Backup Now."

If you want it to backup automatically while charging and connected to wi-fi, you can either lock the screen via the right side button or do what I do -- just let it lock itself automatically based on the time chosen in Settings > Display & Brightness > Auto-Lock.
