How to program different Emergency SoS contacts in Family Sharing for multiple watches

How to program different Emergency SoS contacts in Family Sharing for multiple watches when there is only one iPhone and 2 or more watches. One watch is paired to the iPhone with one SoS contact. The other watch needs to have a different SoS contact; otherwise, the SoS contact could be its own number!

The share location with watch faces is greyed out, so I can’t change it. I tried following the instructions, but am unclear if I’m looking for General>Settings>Restrictions>Allow changes etc. on my phone or my watch. Either way, I tried this on both, and do not see that option for Restrictions on either one. Can you please clarify where exactly I can find this menu, watch or phone?

can you install spotify app on watch using the family member setup i set up a watch for my daughter (who doesn't) have an iphone using the "family member setup" process with my iphone. The process is described here Set up Apple Watch for a family member - Apple Support. My question is - which apps can be downloaded on her watch? Spotify is #1 on her list. If we try directly on the watch, it says "iphone required". from my iphone, I couldn't find any option either. Thanks,
