What is the most recommended charger adapter and cable watts to use for IPhone 11 Pro Max to preserve its battery health.

The Charger, Cable and Total Watts is not going to influence anything on the battery health. Your iPhone has safety circuits built in to withstand any overcharging. Your iPhone's battery will degrade over time no matter what you do. That is the nature of batteries. I have learned to focus and enjoy my $1250 iPhone and not worry about the $80 battery. I will just get the battery replaced after its lifespan has elapsed which is about 2+ years.
