Apple Notes Creation Date - Printing or saving

I understand how to see the creation date of apple notes. What I’m looking to do is to be able to print out or save as a pdf of a note, showing the creation date somewhere on the note. I only see if on an apple device, but not a hard copy.

Are there prior versions of notes stored someplace? I deleted a table in Apple Notes app. In some app's you can retrieve prior versions of a document. How can I find prior versions of a note which I still have the lates copy but need a prior version if available.

Apple Notes I've been using Evernote since 2011 and use it for everything, but I'm tired of the cost of it. I really want to move to Apple Notes as it's improved over the years. One of the main things I use is changing the creation date of a note and this, unfortunately, is a deal breaker for me. If I can't change the creation date of a note, I don't think I can move to Apple Notes. So, is there a way to change the creation date of a note? I do this because I store lots of printed documents in Evernote and when those documents have a date on them, I change the date of the note in Evernote to the date printed on the document because I'm usually not scanning the document the same date as printed on the document. Does that make sense? Please let me know. Mark
