I own an iPhone 11 Pro -- as well as the Series 6 Apple watch with GPS. However I can not find the Compass feature on either device. Is this correct?

Have a look in your app library on the phone or ask siri to open the compass app.

If it's not on your phone then you can download it to you phone from the app store and it should also install on your watch too.
