Organizing and Consolidating itunes files

What is the difference between the "organize itunes" option under the library menu option and the "consolidate" option in the Advanced option located in the preference menu and which is more suitable or both?

As I understand it, "consolidate" put all your media files with a single iTunes folder (if some happen to be outside of it). and "organize" allows for different subfolders within that folder for the music, TV shows, movies, podcasts, and other files that appear within your iTunes library.
