How can I prevent iTunes from playing a genre under shuffle?

I have a lot of different genres in iTunes, and I usually play my iPod (or my MacMini) on shuffle. But I don't want to include Jazz or Classical music in the general shuffle (which is mostly pop/rock/R&B/country). Is there a way to have the shuffle exclude genres of music? I would like to be able to play them on shuffle separately.
