If I am sharing Apple ID with someone when I login to an account will it log it in on the other phone as well
It shouldn't. You have to log in on each device/computer.

If you are using the same Apple ID on both devices, you can access apps without affecting the admin phone. If you are syncing Safari using iCloud, if you access sites using Safari, that data should sync to the other phone, but not change anything.
Since you changed the Apple ID, nothing should sync.
The phone I am setting up doesn’t have a sim. I wanted to use it just for the photos for my online store. I got the Apple ID changed but the number and email is still linked. So I can access apps sign in go to different websites and it won’t change anything on the admins phone?
