What does Apple do with their old iPads?

I was browsing through the apple website and noticed that they only have the most recent iPad up for sale and there are no options to buy the older generations from the website. Does apple sell their older iPads in store or do they just discontinue them? If they just discontinue them, what do they do with the older iPads in their inventory?

The Apple Store website doesn't sell older generation iPads. When wanting to purchase an older generation Apple device, I would recommend purchasing from Best Buy. Best buy has a lot of older iPad generations, usually Geek Squad certified refurbished or iPads at discounted rates.
