How can I roll back the latest software update?

I recently updated to Catalina and now some of my games will not work because they are no longer compatible with this newest update. How do I roll back the update?

I have many games that I have bought that are 32 bit but since I have updated to Catalina I now realise I can't play them ,how can I reverse my update to Mojave and not lose what I have paid for.
