You cannot update your iPhone 5 beyond 10.3.4. iPhone 5s can be taken up to iOS version 12.x.x. You have an iPhone 5 so this is the end of the iOS road for that model.

Those apps have minimum iOS versions listed. If their minimum iOS version requirement is iOS 11, for example, then you will not be able to use them. Those apps simply won't run on lower version as indicated by the publisher of that software.

If those apps require a version of iOS higher than 10.3.4, you can not.
