When i use Command+Z it makes changes to other open apps, not the one i am working on?

So for example I make a mistake on a document in Word, pressing command+Z will go straight to the open excel sheet and delete the last thing on that? even if I haven't done anything on excel for a while and have been woking on word the whole time. it will even jump between several open apps and the other way around, if I'm working on excel, to will jump to word, or another excel sheet.

Is this isolated to Word/Excel..?

Maybe with some experimentation you can devise a work around. Seems an odd behavior I never heard of before.
