thank you for posting in Apple Support Communities. From our understanding you are looking to unpair and erase your Apple Watch but do not have access to the paired iPhone, do we have that right? If so, you can follow the steps in this article: Unpair and erase your Apple Watch listed under the section titled " How to erase your Apple Watch if you don't have your iPhone".
