How can I install Big Sur on my late 2013 27" iMac?
As stated in order to run Big Sur you need a 2014 or later iMac, your computer can run Catalina which will be supported for several more years in order to receive security updates. In short, there is nothing wrong with your current machine continue using it as long as you want. If and when you are ready to upgrade to Big Sur then it will be time to upgrade to a new Mac anyway.

You can't. You need a 2014 iMac at least.
