How do I remove my 15 year old from Family Sharing without her losing what is on her phone? Apps, contacts, photos, etc. she is currently sharing an Apple ID with me.

Sharing an Apple ID and Family Sharing are two different things. To use ➔ Family Sharing, you must have two separate Apple IDs which is not the case with you and your daughter.

I recommend that you get your daughter her own Apple ID and I think that is what you want to do. Create a new Apple ID here ➔ www.appleid.apple.com and then sign out of the Apple ID on your daughter's iPhone. Then sign in with the new Apple ID that you had just created. You may leave the iTunes and App Store Purchase account with the previous Apple ID (yours) if you wish so that the apps do not have issues downloading updates. Make sure that you create a backup of your daughter's iPhone before you change the Apple ID so that if something goes wrong then you have a backup file to restore from.
