Why cant i update pass the 12.5.1? And is it possible to skip to the latest update

You have an iPhone 6 Plus and that model can only be updated up to iOS version 12.5.1. This is due to the hardware limitation in the iPhone 6 Plus (RAM). You will need a newer iPhone to use iOS version 14.x
