I am using a Steel Series Nimbus controller, Apple TV to play Apple Arcade games. How do I leave a game? At the moment, the game in question is Grindstone. None of the buttons on the controller seem to provide a game exit nor is there a place on the screen that I have found yet to do so.

I don't know why, but for reasons unknown I thought you were using a Mac rather than an Apple TV. If the menu button doesn't back out all the way then the TV button should return you to the Apple TV's main menu.

Try the menu button, or use your mouse and take it to the top edge of the screen.

I have tried the menu button, brings me to the settings for the various parts of the game such as sound level etc. No exit option. By mouse, do you mean the swiping surface of the Apple TV remote? I am playing on the TV via Apple TV and do not have a standard mouse for a desktop.

I was referring to the menu button on the controller as not providing an exit option. I don't actually remember right this moment if I tried the menu button the Apple TV remote. I did finally use the Apple TV remote button. This is my first game in the Arcade using a controller and I have not used one in years. I suppose I expected an exit option of some kind in the game itself. I will try the remote menu button as well.
This may be too generic a question, however, is it common in the Arcade games using a controller not to have a marked exit of some kind?
Grindstone is only playable with a controller. Learning to use one again has become a pandemic goal! I would like to play some games with family members in other locations that use the controller, so I decided to see if I could regain that skill set.

I'm afraid I haven't played enough different games to know if there is any consistency, and I normally use the TV remote though I do have a controller.
