I am an Italian guy and I would like to buy a HmePod Mini but it is not possible in Italy, neither in store and in website.
Are there other way? For exemple on UK website directly? If yes, how can I buy from Italy and give the instruction at apple to deliver it at my home in Italy?

No. Apple Stores don't ship to different countries. You will need to wait until it is released in Italy or purchase when you happen to be visiting somewhere that it is available.

I've had the same problem in Switzerland, HomePods are not available here too. I've ordered online from a Swiss retailer and got two US version of the HomePods minis this "grey" way.
Check your local online retailers, I think it would be as in Switzerland, they buy HomePods in other countries to sell them to Italia.
