I’ve tried airplane mode, I’ve tried turning off and back on again, it still will not connect to the Cellular Plan.. it was connected yesterday, but today it’s stopped working... it will still connect
to WiFi.. I can’t figure it out and I’m so frustrated. This is an Apple Watch SE 44m

Hi! Thank you for your feedback, realized I failed to mention that it was a watch paired on Family Setup. I did everything I could restart wise, unpaired, re-paired, and finally contacted the carrier, they had to refresh and change the Apple Watch line type to “standalone” activation. I didn’t know there was a difference and that must have been why it had been constantly disconnecting from cellular over the course of the month we’ve had the watch! Posting this here in case someone else has the same issue

Make sure that the plan is still seen by the watch
iPhone>Watch>Cellular>Cellular Plan>you should see the carrier here
Also you can try force restarting your iPhone by whatever method your version calls for. As soon as you see the Apple logo force restart your watch by holding in the crown and side button for 10 seconds till you see the Apple logo then release. Log into your iPhone and wait for your watch to boot, then log into it.
Failing that I'd try unpairing the watch from your iPhone then pairing it back
