I need to turn off the DND on my phone however it keep resetting itself the following day. How do I stop this from happening

Shut it off via Settings->Do Not Disturb rather than use the "Scheduled" mode.

I’ve done that and it comes back on the following day.
It shouldn't turn back on unless you have it scheduled to.
Do not control it via the Control Panel, shut it (and Scheduled) off in
Settings -> Do Not Disturb.

You can, though it sounds like you are doing the right thing.
Note that if you use "Bedtime" that also has a setting for "Do Not Disturb During Bedtime" that may be enabled.
