I have three credit cards in my wallet but I only get notified when one is charged. Is there a way for me to be notified when any one of the three are used?

You will be notified when your card(s) are used with the use of ApplePay by you on your iPhone. The type of notification is dictated by your card issuer. If you are not using ApplePay with the cards in your Wallet app then those alerts/notifications are entirely controlled and issued by the card issuer's app or alerts set on the card account's settings on the web page.
