Actually there is. You could add an APFS volume of an appropriate size, create a USB Mojave bootable installer, boot your iMac with it and use it to install Mojave on the new APFS volume. I've done it myself.

You need to be running macOS Mojave 10.14 or earlier.
So I would have to backtrack my current system (macOS Catalina) and reinstall macOS Mojave 10.14?Isn't there a better way?
