If this is an issue of needing more free storage to upgrade the watchOS version, then

• Delete music (you can put them back later)
• Delete pictures (you can put them back later)
• Delete apps (you can put them back later)
• Unpair the Apple Watch.
  • Pair back to your iPhone (this unpair/pair clears out caches and cruft from the Apple Watch storage)
