I need to recover some older files from my Time Capsule but my Time Machine does not recognize the backup anymore - the Migration Assistant does see the backup but, as far as I know, just let me choose the last one and I cannot select previous versions. Any ideas? Thx!

Correct.. you cannot choose old backups from Migration Assistant.
Are you after a bunch of files in one clear folder.. on the same date?
Try opening the backup in Finder.. you can then navigate to the said date backup and open that. It is many layers in but you can get there if you keep trying. If that does not work then it is permissions issue.
Copy the whole backup to a USB hard drive on the computer.. change the name of the file if you need to and permissions and that might work.
What OS is the computer running now? What OS was the backup using?
There is a lot of permissions restrictions now on backups when you attempt to use them on a different computer.. basically migration assistant is the only way.
I would try and get the files from backup via the original Catalina computer that created them.. if you cannot do this.. it might be possible to recreate the original boot disk of the Catalina computer on the date you require.. this is a long process but it has got several people here out of trouble.
Big Sur is a big jump i.e. OSX to OSXI and I still don't have a computer that can do big sur.. but from what I understand it is not possible to recreate disk from Time Machine. It works very differently.
Thanks for your input! the computer is running on Catalina and the sparse backup should be using the same OS - it is 2TB and right now I'm trying to copy it to a new external HD from my current Time Capsule to then connect it to a Big Sur M1 macbook.
