I have an iphone 7. I have the adapter and wired earbuds, but music only plays from the device and not thru the earbuds. It's no debris in the porthole, case not in the way (also tried w/o the case and same thing) and the adapter and earbuds are both new.
This just started happening.
what is the issue?

Try connecting a different pair of headphones either directly or with the adapter (whichever method works for the headphones) and see if that works. That will help narrow done the issue to either your previous headphones/adapter OR an issue with the iPhone itself.
