What do you mean you want to stop Apple Pay?

Apple Pay is a payment mechanism. Its not functioning unless you actually want to use it.

You can remove your credit cards, debit cards or other payment methods from it if you want. See here: link-> Manage the cards that you use with Apple Pay - Apple Support
