Will my Epson V600 photo perfection scanner be compatible with the Big Sur on a 2021, 16-inch MacBook Pro?

I need to update my MacBook Pro and want to buy the 16-inch. As a publishing creative, print and digital, am super disappointed that Mac dropped the USB ports, HDMI and the VGA cables that I have on my MacBook Pro 2010 running High Sierra and still compatible with the Epson V600 photo perfection scanner and CS6... Yes, Adobe, those of us in rural areas still need the standalone because limited bandwidth hi-speed internet doesn't cut it. I'm sure, all the folks moving from the Bay Area to Montana are discovering that now...too slow and not enough bandwidth to work on the cloud.

That said, will the the USB cable plugged into a lightning bolt cable and into the MAC be recognized by Big Sur? Will Big Sur recognize the standalone CS6? Thanks in advance!

this from Epson support site; looks like it's ok. I have that scanner but don't use it . I use the Epson XP-8600 photo printer and scanner . Works fine with BS.
