I am trying to set up my Itunes on a new to me MacBook Pro with the os Big Sur but iTunes wants me to install os Catalina which is older?

The iTunes app does not run on a Mac with Catalina or Big Sur. It was replaced with other apps. See information in: What happened to iTunes? - Apple Support
