I recently updated my laptop to a MacBook Air M1. My 2018 MacBook Pro allowed me to connect to my iMac with a Thunderbolt cable 2 and an Thunderbolt 2 to 3 adaptor. I would press Command F2 on the Imac and it worked perfect. Now does not work. I have been unable to find a solution online - help!

To make sure I am understanding you, I cannot use the iMac since the TDM (Command F2) no longer works. But I can still use a second screen, just not an old iMac. Correct.
That's correct.
Clark you can use an old mac with 3rd party software. I'm using DuetDisplay to extend my 2020 iMac to a 2012 iMac. LunaDisplay is also a possibility.
