Screen Mirroring from my iPhone 11 to my MacBook Pro and when I click on a photo, it is not mirroring correctly

So I do tutorials using Reflector 3 mirroring my iPhone onto my MacBook Pro to run through how to do things on your iPhone. Trying to do one on sending a photo via text or email. When I get to the point where I tap on the photo to choose it to share, my MacBook turns the iPhone sideways and doesn't show the share icon etc. It is no longer "mirrored". I thought it was a problem with Reflector 3 and submitted a ticket, but they say that's the way it works in Apple screen mirroring. I have done this before with no problem...is this a result of the latest update or something? I'm running Big Sur v 11.2
