I speak both English and Spanish and I have not had trouble on iPhone or iPads switching between the two however on my MacBook Pro I do not seem to be able to find a way to speak Spanish and have it write to text.
I am in 10.15.7 and I have the keyboard switched to Latin America but yet it won't recognize Spanish speech and write it on the screen in notepad or pages.

In MacOS the keyboard layout doesn't matter, you have to set dictation language in system prefs > keyboard > dictation > language
