When I try to convert my iTunes songs to MP3 format, I get to “Files, then Convert”. However, all the options, ( create iPod version, MP3 version, etc), are grayed out and I get no further. Can anyone help? Thanks.

Try Repair security permissions for iTunes for Mac - Apple Community. Or Audacity.

How can I get the grayed out options to be available when I try to convert my audio track , recorded into , quicktime, to MP3 format so that I can share it with friends?

You cannot convert DRM protected content (Apple Music or pre-2010 protected purchases) or anything that is in the cloud. Pre-2010 purchases can be burned to audio CD and then ripped back.
