When I start the fitness + on my iPhone 12 mini then try and put it on to Apple TV it can’t find my watch but if I open the fitness app on the TV it does
i also get buffering unless I have downloaded the video even though my internet speed is well over 100mb

To make sure we're on the same page, you're attempting to start a Fitness+ workout on your iPhone and then cast it to your Apple TV via AirPlay?
If so, that feature is not supported at this time. To begin an Fitness+ workout, you would need to start it by opening the Fitness app on your compatible Apple TV and then connect your Apple Watch. See the details and eligible devices here:
As to the buffering, is this when using Fitness on your Apple TV or specifically your iPhone?

Got it.
To clarify, if you want to ultimately do a Fitness+ workout on your Apple TV, it would need to be started on the Apple TV.
As to the buffering, if it's specifically on the Apple TV, take a look at the tips below:

and yes I am starting the app on my iPhone as I find it easier to find the workouts I want but not to be
so I need to start the app and my watch will sync?
I had downloaded a couple of the works outs to my phone and they work smoothly but I can’t do that on the Apple TV.
I think my iPhone does it smoothly but TV definitely buffers and I watch Netflix Amazon Prime and Apple TV without problem
now I know my phone doesn’t work that way I’ll stop trying!!
