I have a new gmail address and I want it's emails on my Apple Watch Series 6. How do I change the gmail address in Apple Watch app on my Apple iPhone SE 2nd gen under Mail / Mail Settings / Accounts. How does it get prepopulated?

The mail accounts on your Watch are on your iPhone and you select what accounts you want on the Watch from the iPhone. You will need to add that account to your iPhone and then select it for the Watch.
