Which system version is installed on your iPhone? If you have not done so, you may want to upgrade the iPhone to the most recent version. The metadata for shared photos seem to be somewhat more stable on iOS 14 than in the earlier versions.
The problem is, that shared albums are just sharing a downsized, new copy of the image file, and Apple does not guarantee, that the original dates, titles, and metadata will be transferred. "Shared Albums upload a copy of your data. Downloaded content may not contain the same information as the original."
It is safer to add all important data as a comment on your photo, when you share it.
