We've bought an iPad for our 8 year old son (my step-son), who needs one for school this year.
Our son spends most of the time with us, but every second weekend with his dad.
How are we best to set up the iPad? Me/my wife as user, and create a Child ID? Family sharing?
Our main concern is making sure his dad doesn't get access to any of our personal info - messages/emails/etc.

If you set it up with child apple ID and family sharing, all that will be on the iPad is the child information
So messages and emails sent to the child. And pictures/albums you share with the child
Make sure its the child apple ID only that is signed into the iPad.

And ask to buy is a good idea:

Assuming that you have an iPad or iPhone of your own to “manage” you Son’s use, you would be best advised to set-up Family Sharing. Your Son’s iPad should be signed-in using his own AppleID (iPad and iPhone don’t support multiple users).
You might also consider set-up of Parental and ScreenTime Controls.
