I have several subscriptions. Some are personal and others are business. I have 2 payment sources saved - one for personal and the other business. How do I assign the subscriptions to the appropriate payment forms?

It's best not to mix personal and business in the same account as the system can't differentiate between the two.
If you need something that specific it is better to create a personal and a business Apple ID.

You keep the current Apple ID and decide if it is your personal or your business ID and from here forward only use it as you have decided. Then create a second Apple ID and use it for the other.
Enter the credit card that you wish to use for personal purchases as the payment method in the personal account and the credit card that you wish to use for business purchases in the business account.
Then never the twain shall meet.
