Hello! I started transferring data from iPhone 7 Plus to iPhone 12 Mini. at the same time, the software update to ios 14.4 began. the process has been going on for 3 hours. is it possible normal? how much longer to wait? can the process be interrupted? and what are the consequences?

Do not interrupt a software update. Put the device on a charger and wait. It could take a very long time.

You can always reset the 12 to factory with Settings, General, Reset, Erase all content and settings, then start again.
Wait for the update to finish.
