If a SIM is removed from an iPhone would that cause the call logs through the cell provider to be erased? Let’s say a certain time period of a few hours is missing.

No. This is because that information is not stored on the SIM card. The call log is stored on the iPhone AND also maintained by the carrier. If, for whatever reason, the call log is missing on the iPhone then you can always check on your carrier's website where the calls should be listed.

Carried does not have record either. They mentioned if sim was removed phone would work but logs would be missing from carrier end
I was talking about existing logs before the SIM card was removed. Once the SIM card is removed then the logs will still exist on the iPhone and at the carrier's end however these will be existing logs. All calls that are made or received while the SIM card is out will not be logged and therefore you carrier is right about that.
