cannot get list view to appear on watch

When I did the most recent update on my watch and my husband's watch, I can no longer see the "list view" option when I press the screen. I saw others with the same issue and they suggested resetting the watch. I have reset the watches 4 times and the problem persists. I called Apple and the advisor was unhelpful. This is my 3rd Apple Watch and this is very frustrating!

Apple Watch list view always starting at the top, even after just accessing My Apple Watch Ultra II now always starts at the top when I go to it in list mode. Before it would keep it's place when I used it and then returned to it. I am constantly sliding it down to the app I need where before it stayed in position. Is there a way to make this work the way it did before.

On the watch;

Settings/App View and change it here.
