I received a notice (support/apple.com/iphone/restore) on my iPhone 8. But I can't connect it to my MacBook Air. The cables don't fit both. Help!

You can get a cable or adapter you need at Target, Walmart, or online through Amazon or Apple.

The MBA does have USB just a different size
That message usually means there's something wrong with the iPhone's software. The issue prevents the phone from starting.
The fix requires you to use a computer to reinstall the phone's software and restore your data from a backup.

You need an adapter, probably USBA female to USBC male.

Thank you, but the real problem is that my iPhone won't restart. It just keeps with that message. I can't use my phone!
Unfortunately that doesn't help me right now. Not sure why my phone needs to be restored in the first place!
So Apple made the only way to fix my phone to connect it to my laptop...and they made my laptop unable to connect to my phone (no USB port). Wonderful.
