I presume that you are seeking advice as to either how to transfer all your existing data from your old iPad to new - or how to erase all data from your existing iPad.

Apple will not do this for you, but the process is simple - and you have multiple options as to how this is achieved.

“Transfer” is rather a misnomer. In reality, your data and setup is merely cloned to the new device. Nothing is moved or removed from the original device.
An alternative is to restore either an iCloud or iTunes backup to the new device:

Simply follow this procedure:

All personal/sensitive information and data will be erased (a crypto-erase), plus the Activation Lock will be removed - both of which are essential prior to parting with your old iPad.

Please read the FAQ that I provided the link to in the first response to this topic over 12 hours ago. That single link I posted provides answers to pretty much any question you might have about a trade-in and much of the later post just lays it out in a different presentation. Th FAQ includes what to do about erasing a device's data, namely the link that says, "Here’s what to do before you trade in your iPhone, iPad, or iPod touch" which directs to the identical document as the "What to do before selling or giving away your iPhone, iPad, or iPod touch" link posted by another user takes you to. This one document has these steps to "transfer information to your new device, then remove your personal information from your old device."

Also read the FAQ at the very bottom.
Apple will determine how much they think your old device is worth an how much they will offer. You can then use that to buy your new device, or at least make a partial payment.
