When printing business cards I discovered that page 1 of the template is Avery 5371 and page 2 is 5881. Why?

The difference between the two is the expected precut pattern on the Avery business card sheets.
5371 has 10 cards to a sheet, with no space between the cards
5881 has 8 cards on a sheet with "bleed space" between them, allowing 'print to the edge' backgrounds in the individual cards.
After opening a document from the template, delete the page that does not fit the precut pattern on the sheets you are using, and design your cards to fit that template.
Or skip Pages and go directly to Avery's Design and Print site, linked in FoxFifth's post above.

I haven't tried using a Pages template but you may want to skip that and do it directly from their online site: https://www.avery.com/software/design-and-print/
