Can I run High Sierra on my new iMac 20,1?

Can I run High Sierra on my new iMac 20,1 and how to install it?

I have High Sierra and all my data on an external TimeMachine HDD, attached to the iMac27.

When using Command R after PWR on, is says the system (Big Sur) doesn't support this.

No you cannot install High Sierra on your mac.

Macs cannot downgrade to an older OS than the one it comes preinstalled with.

Your mac came with Big Sur installed so you cannot run any of the older OS's.

New macs with the silicon chip have a different protocol to boot ing to the Recovery HD.

Hold and press your power button until you see Loading startup options,

I was able to recover all my data from an older Mac. But the operating system remains Big Sur. Much of my application software does not run on Big Sur. The original OS High Sierra is also available on the recovery disk. I would like to know how to replace Big Sur with the High Sierra on the Recovery HD with a few key strokes if possible.
