how can I transfer all my videos and photos (255 GB)from my IPhone X to my MacBook Air using a USB. NB without uploading to the iCloud

Connect the phone to your Mac and use Image Capture (in the Applications Folder)

Be sure that all instances of the iCloud library are turned off.
