So my friend just won a iPhone 12 from at&t but they only had the green one is there a way I can trade it in brand new for a different color?

Depending upon the terms of the prize and if it is just a phone from Apple itself:

Apple Store (US) Sales and Refund Policy - http://www.apple.com/shop/help/returns_refund - "You have 14 calendar days to return an item from the date you received it."

If it is a phone from ATT she should ask them.
